The #Bravo" island cheese is matured and obtained from draining off curdled-milk, after milk coagulation in open vat. Kneaded, salted and ripened by traditional methods. Aged in wooden boards, in special facilities ("caves").
Features: Semi-hard cheese with small "eyes" and a yellowish color. Natural hard yellow rind. Sharp but clean flavor, slightly spiced. Aging period depends on the cheese:
- Island Cheese and Island Cheese (slice): 3 months (minimum)
- Small Island Cheese: 2 months (minimum)
Ingredients: Cow's milk (pasteurized), lactic culture, rennet, calcium chloride and salt.
