The "Castelinhos" cheese is produced on the island of Terceira, from the original traditional recipe. It is a cheese characterized for being very buttery, soft, with a high fat content, which makes it ideal for appetizers, spreads, and/or dessert. The "Castelinhos" cheese has a shelf life between four and six months.
The name "Castelinho" (little castle) was assigned as a reference to the Fortress of São Sebastião, in Angra do Heroismo, which is usually referred to as the "Little Castle". The image of this fortress is present in the logo of cheese, accompanied by a compass card.
Curing: 1 month. M.G.E.S.: 45% -60%.
Ingredients: Pasteurized milk, milk enzymes, calcium chloride, rennet and salt.
